Swiss enchiladas covered with a creamy cheese sauce

Mexican food is one of the most delicious cuisines in the world. Enchiladas couldn’t be left behind and today’s recipe will be a very easy and creamy one. What’s more important is that this is a dish that could be prepared for a large family or celebration.

Ingredients

  • Fat free ground beef
  • Cilantro
  • 5 garlic cloves
  • 1 onion
  • Mexican cheese (of your preference)
  • 1/2 cup of cream cheese
  • ¼ cup of chicken broth
  • ¼ of poblano chile (optional)
  • 4 small Mexican green tomatoes
  • soft tortillas

Preparation

Inside a pot boil the ground beef, onion and garlic cloves. On a separate stove also boil the tomatoes. The best way to know if what you cooked is ready ―is by pinching it with a fork, if it glides through smoothly than that’s the perfect sing!

Carefully remove the onion and garlic cloves from the pot and place them inside a blender with the tomatoes. Incorporate the cilantro, chicken broth, poblano chile, cream cheese and blend.

Sautee the ground beef and heat up the tortillas. Roll the tortillas tightly all around the ground beef. Pour the blended ingredients on top and place the enchiladas inside the oven for 10 minutes at 350 degrees.

To finish, drizzle cheese on top and serve! Mexican enchiladas covered with a cream cheese sauce don't require an expert chef and are so easy to make.
